Thank you Shannon :) I really enjoyed coming up with a list of happy things! And of course since it IS monday, I won't leave without a recipe! We've been working on this one around the gypsy house..... it is a very yummy peanut butter cookie..... they disappear awfully quick around here. I think the peanut butter oatmeal ones would be great with dried cranberries in them.... but the look on my kids face face when I suggested it made me think I shouldn't. Maybe next time :)
Gypsy Mama's Peanut Butter Oatmeal Cookies
1 cup (2 sticks) butter softened
3/4 cup brown sugar
3/4 cup white sugar (we use evaporated cane juice)
1.5 cups natural unsweetened peanut butter
2 eggs
1 tsp vanilla
1 cup flour
3/4 cup whole wheat pastry flour
1 cup oats
1.5 tsp baking soda
1/2 tsp salt
*Preheat oven to 375. Cream together butter & sugars. Add peanut butter, eggs & vanilla and mix well. In a separate bowl whisk together the flours, oats, baking soda & salt. Add the flour mixture into the butter mixture and mix well. Drop by tablespoon onto cookie sheet and bake until cracked and slightly golden. About 8-10 minutes.
For an extra yummy treat, omit the oatmeal and increase the white flour to 1.5 cups. When the cookies are fresh out of the oven press a dark chocolate kiss into each while they are still hot.
Now you just need a good cup of hot coffee to sip while you eat these. Yum!!
OH man, now im really hungry!! Gregg has a slight addiction to oatmeal choc chip cookies. I wonder if he would like these ones. Im gonna try :) thanks for the recipe!! You rock :)

yum! i love your list and i love that you had to limit it. i love that some people took a long time with their lists, carefully choosing. i am grateful there are more than 10 things that make me happy. i picked the first 10 to come to mind.

I really think he was a goat in his past life. That is, if dogs have past lives.... truly I am quite certain a kid of mine coaxed him up there.... and he is ever so happy to please that pooch. Of course when he jumped down the bags of soil tipped over a bit..... fun fun fun :)
